This Gluten Free Egg Roll in a Bowl recipe could not be any simpler… or delicious. It packs a lot of veggies and a lot of flavor, too!

I think it’s helpful to have a few recipes that can be staples in the meal rotation. Recipes that you have ingredients on hand for and can be made quickly.

This egg roll in a bowl is that kind of recipe for me. Another reason I love it so much is because it makes some insane leftovers… and when I cook a meal I always cook with the intention of leftovers so I have lunch the next day.

What ingredients do you need for Egg Roll in a Bowl?

  • Ground Pork (you can also use ground beef or ground turkey)
  • Avocado Oil
  • Pepper
  • Minced ginger and garlic
  • Mushrooms
  • Sesame Oil
  • Coconut Aminos
  • Rice Vinegar
  • Bagged Coleslaw

This recipe is so simple. You cannot mess it up. I promise.

I don’t like recipes that require me to give it my undivided attention while making it because honestly, with 3 kids around it’s unlikely I get to cook dinner without being pulled in a million directions during the process!

How do you make Egg Roll in a Bowl?

  • Heat avocado oil in skillet and add ginger and garlic. Sauté until fragrant.
  • Add ground pork, sprinkle with pepper and add in cleaned mushrooms.
  • Cook until pork is brown and nearly crispy and almost all the liquid is evaporated. The mushrooms add a bit of water to the skillet, this will evaporate the longer you cook it.
  • While pork is cooking, combine the coconut aminos, sesame oil and rice vinegar and set aside.
  • Once pork is cooked, add the bagged coleslaw and pour the prepared sauce over top.
  • Sauté until the coleslaw becomes tender, only a few minutes.
  • Remove from heat and serve with the spicy mayo drizzle if desired.

*I use ground pork from Butcher Box, it’s where we buy most of our meat and it is excellent quality, humanely raised and most of it is organic.

I added a delicious sauce you can drizzle on top of this, but it doesn’t need it so if sauces aren’t your thing… you can skip it. If you want a little extra kick, give it a try! It’s yummy!

How to make the spicy mayo drizzle?

Combine all ingredients below in a bowl while the egg roll in a bowl is cooking on the skillet and it will be ready to go once dinner is done!

I use a whisk to combine this and use until smooth. It will start out a little clumpy, that’s normal, just keep stirring.

The spicy mayo drizzle only needs a few ingredients to make it a delicious addition!

  • Primal Kitchen Mayo (you can use regular mayo if you’d like, we just use this one)
  • Rice Vinegar
  • Hot Sauce (I used Siete brand hot sauce)
  • Lime
  • Coconut Aminos
  • Sesame Oil

Why doesn’t this recipe not have eggs in it?

Want to know a secret? I had to google this! I honestly did not know and figured that someone else was bound to have this questions.

From what I could find, the egg in “Egg Rolls” is from the wrapper of egg rolls, not the filling. So, that’s why the egg roll in a bowl doesn’t have eggs because it is without the wrapper!

Is Egg Roll in a Bowl gluten free?

This recipe is gluten free because I replaced traditional soy sauce with coconut aminos. My family actually prefers coconut aminos so this has been an easy switch for us to make as a family!

I eat a gluten free diet because of Hashimoto’s.

This super simple and delcious egg roll in a bowl is quick and easy, and gluten free!

Ingredients

Egg Roll in a Bowl

  • 1 tsp avocado oil
  • 1 lb ground pork
  • ¼ tsp pepper
  • 1 TBS minced ginger
  • 1 TBS minced garlic
  • 8 oz baby bella mushrooms rinsed and drained
  • ¼ cup coconut aminos
  • 1 TBS sesame oil
  • ½ TBS rice vinegar
  • 14 oz bagged coleslaw with carrots

Spicy Mayo Drizzle

  • ½ cup mayo we use Primal Kitchen
  • 1 tsp rice vinegar
  • 1 TBS hot sauce we use Siete brand, you can add more for more spice
  • 1 lime juiced
  • 1 TBS coconut aminos
  • ½ tsp sesame oil

Instructions

  • Heat avocado oil in skillet. Add ginger and garlic and saute until fragrant, approximately 1 minute.
  • Add ground pork, mushrooms and sprinkle with pepper to the skillet with ginger and garlic.
  • Cook until pork is brown and nearly crispy, and almost all liquid is evaporated. This will take some time since the mushrooms add some liquid to the skillet. It will evaporate.
  • While pork is cooking you can prepare the sauce by combining coconut aminos, sesame oil and rice vinegar. Set aside.
  • Once pork is fully cooked, add bagged coleslaw and pour prepared sauce over top.
  • Saute until coleslaw is tender. Remove from heat.
  • *Prepare Spicy Mayo Drizzle if desired.

Spicy Mayo Drizzle

  • Combine all ingredients for the mayo drizzle and use a whisk to combine well. It will have some clumps, keep stirring until it becomes creamy.
  • Drizzle over top of Egg Roll in a bowl
