This weekend I hosted a Weight Watchers Freestyle Fiesta to share the WW program with friends who are not on the program. As a Weight Watchers Ambassador I was given this incredible opportunity to spoil my friends and share my story and how I make the WW Freestyle program work for me. It also gave me the opportunity to share my healthy mexican cauliflower rice recipe!
The party was a “Freestyle Fiesta” and if you know me, you know I LOVE tacos! I was excited to share with them that you can totally have tacos on Weight Watchers. With a history of binge eating disorder and years spent labeling certain foods as “good” or “bad” it’s pretty awesome to finally be in a place that I know and accept that food is food, and it shouldn’t be labeled as “good” or “bad”. On Weight Watchers I can have it all foods in moderation and I decide what foods to eat based on how my body feels when I eat it. The plan really is so customizable to each person and I’m so thankful it’s helped me lose 100+ pounds.
I am not what you’d call a party planner. So, if I lack in an area that’s when I call on a little help from my friends… and what a great friend I have in Jennifer! Jennifer is my neighbor, business partner and I am also a virtual assistant for her blog Slow Cooker Gourmet. Basically, we are always dreaming up all kinds of things together with ideas to set the world on fire 😉 Just ask our husbands! When my oldest came down with the flu last week she was gracious enough to open her home and allow me to host my Fiesta at her house. Such a lifesaver!
Jennifer creates amazing recipes, and I wanted to serve a yummy chicken taco and knew she’d come up with the perfect twist on “boring” chicken… and that’s what she did. I have been making Healthy Mexican Cauliflower Rice for a while now and I love it. This makes a big batch so you’ll have plenty leftover, which you are going to want because it’s so good. Even my kids enjoy this recipe and anytime I can get more veggies in their diet, I’m a happy mama!

A healthy twist on traditional mexican rice, this dish is full of flavor and is made from cauliflower!
- 1 tbsp olive oil
- 1/4 small yellow onion diced
- 24 ounces frozen riced cauliflower
- 1 tbsp minced garlic
- 2 1/4 tsp cumin
- 1 tsp dried cilantro
- 1 1/4 tsp salt add more to taste if desired
- 1/4 cup tomato paste
- 1/4 tsp oregano
- 1/2 cup vegetable broth
Add olive oil to skillet over medium heat and add diced onion. Cook until onions are softened, about 3 minutes.
Add all remaining ingredients, mix together and cook until heated through.
