How do you prepare cauliflower rice?
Preparing it is very simple. Just put a little oil in a skillet and add the frozen cauliflower into the skillet and cook until it is tender. Don’t let it intimidate you! It’s really simple!
I have been making Healthy Mexican Cauliflower Rice for a while now and I love it. This makes a big batch so you’ll have plenty leftover, which you are going to want because it’s so good. Even my kids enjoy this recipe and any time I can get more veggies in their diet, I’m a happy mama!

Healthy Mexican Cauliflower Rice
- 1 tbsp olive oil
- 1/4 small yellow onion diced
- 24 ounces frozen riced cauliflower
- 1 tbsp minced garlic
- 2 1/4 tsp cumin
- 1 tsp dried cilantro
- 1 1/4 tsp salt add more to taste if desired
- 1/4 cup tomato paste
- 1/4 tsp oregano
- 1/2 cup vegetable broth
- Add olive oil to skillet over medium heat and add diced onion. Cook until onions are softened, about 3 minutes.
- Add all remaining ingredients, mix together and cook until heated through.
