I didn’t have fresh asparagus until I was in my 20’s.
Growing up my Mom made canned asparagus and I loved it. I was really hesitant to try fresh, but once I did… I’ve never gone back.
And now that I’ve had this Oven Roasted Garlic Parmesan Asparagus I don’t know if I’ll want to make it any other way!

When I made this recipe I had it on the counter when my son got home from school so I asked him to try it so he could give me his very honest opinion 😉 Before I knew it we’d polished off almost the entire pound of asparagus… that’s how good it is!

How to store Asparagus?
Years ago someone told me to put the asparagus with the woody part in a cup filled with water and store it in the fridge. Storing it in the water keeps it fresher longer. Since then I’ve stored my fresh asparagus that way and been very happy with my results. Have you ever heard of that tip before?
Oven Roasted Garlic Parmesan Asparagus
- 1lbfresh asparagus
- 1TBSolive oil
- 1tspminced garlic
- 1/4 tsp pepper
- 1/4cup fresh parmesan cheesegrated
- Wash asparagus and cut off woody ends.
- Layer a baking sheet with foil and place asparagus in a single layer on pan.
- Mix olive oil, garlic, salt and pepper in a separate bowl then brush mixture over asparagus.
- Sprinkle freshly grated parmesan cheese over asparagus.
- Bake at 425 degrees for 8-10 minutes depending on preference.
