I love soups and chili. When the weather turns cooler in the fall here in Kansas, I get super excited to start cooking up all of my favorite soups. What I love about them is that they are easy to prepare, easy to reheat for leftovers, and delicious… because who doesn’t love delicious food?!
I also was able to make this entire recipe in one slow cooker… from start to finish.
I LOVE my Cuisinart Multi-Cooker because I sautéed the onions and cooked the ground chicken and then added in all the other ingredients into the slow cooker instead of doing it in a skillet and then transferring it, creating another dirty dish. And I don’t know about you but I have enough dishes to do already!
This slow cooker seriously makes cooking so easy… if only it could do my dishes! 😉
This recipe is loaded with beans and spices… but you won’t find any tomato chunks in it. My husband is not a fan of tomato chunks. If I make a recipe with diced tomatoes it’s guaranteed he will pick them out and leave them on his plate. So I told him I was going to create a recipe that he would approve of. When he ate this one he said it had the best “sauce” (we don’t use technical terms around here) he’d tasted in our kitchen in a while.
If you don’t like tomato chunks… this one might be a winner for you, too!
Can I also say that I’m kind of obsessed with ancho chili powder? I’m not sure why I haven’t experimented with this before but it is seriously so good and adds a hint of smokiness to your food. If you haven’t played around with it in your kitchen you should.
This soup makes such great leftovers and you can top it with all kinds of goodies. Some ideas for toppings are:
- non-fat greek yogurt (alternative to sour cream)
- sour cream
- tortilla chips
- saltine crackers

This Slow Cooker Healthy Chicken Chili is an easy recipe that is big on flavor and the perfect bowl of comfort food when it's cold outside!
- 1 small yellow onion
- 1 pound 99% fat free ground chicken
- 28 ounce crushed tomatoes
- 8 ounce tomato sauce
- 15.5 ounce black beans drained & rinsed
- 15.5 ounce navy (white) beans drained & rinsed
- 4 ounces diced green chilis
- 1 cup chicken broth
- 2 tsp ancho chili powder
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp salt
- 1 tsp minced garlic jarred
Dice onion and place in skillet (or multi-cooker) with ground chicken. Cook until chicken is fully cooked and onions are translucent.
Add chicken and onions to slow cooker.
Drain and rinse beans and add to the slow cooker.
Add all remaining ingredients to slow cooker.
Cook on low for 6 hours, or high for 2-4 hours.
