Does dinner stress you out? It doesn’t have to. Because with recipes like Slow Cooker Pineapple Salsa Chicken, I assure you, you don’t have to have tons of cooking skills to make it!
Between the hours of 5-6pm, my boys get a little cranky… and a little rowdy… let’s just call it what it is… they get HANGRY.
Do you know what hangry is?
It’s when you get so hungry you get angry… and that is what happens when it gets close to dinner time for my boys!
One of the reasons I love slow cooker meals is because the dinner hour is a lot less stressful with kids when I’m not trying to figure out what to make and preparing it during their “needy” time…. rather I take the lid off the slow cooker, plop dinner on a plate and BAM… Mom of the Year.
Ok, so it doesn’t quite make me Mom of the Year, but I tell ya… it sure takes the pressure off when dinner has been cooking all day in a slow cooker!
Slow Cooker meals are quick, easy and usually enough is left that we have food for lunches for 1-2 days which I love because cooking once and eating 2-3x is good meal planning in my opinion!
It doesn’t get much easier, or healthier, than this Slow Cooker Salsa Chicken… and with the additional of pineapple salsa just in time for spring, this recipe is going to be a new favorite at our house.
You can do so many different things with this recipe!
- Make Chicken Tacos
- Serve over a bed of brown rice
- Serve with black beans and corn
- Top with sliced avocado and/or sour cream
- Serve with Healthy Mexican Cauliflower Rice (my FAVORITE side dish)
- Serve with grilled pineapple… OH YES. SO yum.
I swear there couldn’t be an easier recipe on the planet than this one… you can thank me later when your family gobbles it up and they have no idea that you literally took frozen chicken breasts and dumped a jar of salsa on it, put it in the slow cooker and cooked on low for a few hours. Fake it till ya make it, Mama 😉

Slow Cooker Pineapple Salsa Chicken is quick, easy and healthy and can be used in so many different recipes!
- 1 lb boneless, skinless chicken breasts
- 12 oz pineapple salsa
Put chicken in slow cooker and dump in salsa. (Chicken can be fresh or frozen)
Put lid on slow cooker and cook on low for 4-6 hours or on high for 3-4 hours.
Once chicken is cooked through, shred with forks and stir.
Serve as you wish, and enjoy!
