Healthy Mexican Cauliflower Rice

A healthy twist on traditional mexican rice, this dish is full of flavor and is made from cauliflower!

Ingredients

  • 1 tbsp olive oil
  • 1/4 small yellow onion diced
  • 24 ounces frozen riced cauliflower
  • 1 tbsp minced garlic
  • 2 1/4 tsp cumin
  • 1 tsp dried cilantro
  • 1 1/4 tsp salt add more to taste if desired
  • 1/4 cup tomato paste
  • 1/4 tsp oregano
  • 1/2 cup vegetable broth

Instructions

  • Add olive oil to skillet over medium heat and add diced onion.  Cook until onions are softened, about 3 minutes.
  • Add all remaining ingredients, mix together and cook until heated through.
  • Enjoy!
