A healthy twist on traditional mexican rice, this dish is full of flavor and is made from cauliflower!

- 1 tbsp olive oil
- 1/4 small yellow onion diced
- 24 ounces frozen riced cauliflower
- 1 tbsp minced garlic
- 2 1/4 tsp cumin
- 1 tsp dried cilantro
- 1 1/4 tsp salt add more to taste if desired
- 1/4 cup tomato paste
- 1/4 tsp oregano
- 1/2 cup vegetable broth
Add olive oil to skillet over medium heat and add diced onion. Cook until onions are softened, about 3 minutes.
Add all remaining ingredients, mix together and cook until heated through.
