One Pot Vegetable Beef Soup

This easy One Pot Vegetable Beef Soup is made on the stove top and is a fantastic way to get more veggies on the table!

Ingredients

  • 1 TBS olive oil
  • 1 medium white onion diced
  • 1 tsp minced garlic
  • 1 lb lean ground beef
  • 11 oz low sodium vegetable juice I used V8
  • 2 cups beef broth
  • 1/2 tsp black pepper
  • 2 tsp chili powder
  • 1/4 tsp salt
  • 32 oz frozen mixed vegetables- carrots, green beans, corn and peas

Instructions

  • Heat olive oil in dutch oven, add diced onion and garlic and saute for 3-4 minutes until onions are tender.
  • Add lean ground beef and cook until meat is cooked through.
  • Add all remaining ingredients and allow to simmer on medium heat for about 45 minutes.
