Ingredients

  • 1 small yellow onion (diced)
  • 2 tsp minced garlic
  • 1 pound ground turkey 93/7
  • 15 ounces black beans (drained and rinsed)
  • 1 medium butternut squash (peeled and diced)
  • 1 cup chopped spinach (frozen)
  • 29 ounces fire roasted diced tomatoes
  • 8 ounces tomato sauce
  • 1 TBS cumin
  • 1 TBS chili powder
  • .5 tsp chipotle chili powder
  • 1 tsp salt
  • 1 cup chicken broth (more if desired)

Instructions

  • Add diced onion, garlic and turkey to slow cooker (or multi cooker).  Cook until turkey is cooked through.
  • While turkey is cooking, cut off the ends and peel butternut squash.  Remove seeds and dice into 1" cubes.  Add to turkey mixture in slow cooker once it is cooked through.
  • Drain and rinse black beans and add to slow cooker.
  • Add all remaining ingredients to slow cooker.
  • Cook on low for 4-6 hours, or high for 2-3 hours or until butternut squash is tender.
