Ingredients

  • 2 lb 93/7 ground turkey
  • 4 TBS Taco Seasoning
  • 30 ounces canned black beans,
  • 2 cup grape tomatoes

Skillet Corn

  • 2 TBS olive oil
  • 2 cup frozen corn

Healthy Mexican Cauliflower Rice

Instructions

  • Heat skillet over medium heat and cook ground turkey.  Add taco seasoning and cook until done.  Drain if preferred.
  • While ground turkey is cooking, heat another small skillet with olive oil and add corn.  Cook until corn is cooked and slightly browned.
  • In a large skillet prepare my Healthy Mexican Cauliflower Rice recipe.
  • Heat black beans on stove top or in microwave until warmed.
  • Evenly divide ingredients into 10 servings.
