- 1 TBS olive oil
- 1 medium white onion diced
- 1 tsp minced garlic
- 1 lb lean ground beef
- 11 oz low sodium vegetable juice I used V8
- 2 cups beef broth
- 1/2 tsp black pepper
- 2 tsp chili powder
- 1/4 tsp salt
- 32 oz frozen mixed vegetables- carrots, green beans, corn and peas
Heat olive oil in dutch oven, add diced onion and garlic and saute for 3-4 minutes until onions are tender.
Add lean ground beef and cook until meat is cooked through.
Add all remaining ingredients and allow to simmer on medium heat for about 45 minutes.
