Roasted Broccoli and Cauliflower

Oven Roasted Broccoli and Cauliflower is the perfect side dish for a meal, or can easily be prepared ahead of time to have vegetables ready for the week!

Ingredients

  • 1 head cauliflower (cut into bite sized pieces)
  • 1 head broccoli (cut into bite sized pieces)
  • 2 TBS avocado oil (or olive oil)
  • 1 tsp salt
  • 1/4 tsp pepper

Instructions

  • Preheat oven to 425 and line baking sheet with parchment paper
  • Cut broccoli and cauliflower into bite sized pieces and wash thoroughly.
  • Place in a bowl and toss to coat with oil
  • Once oil is evenly coated on vegetables sprinkle salt and pepper (you can add more or less to taste) and mix well.
  • Place vegetables on baking sheet in a single layer and bake for 25-30 minutes.

Notes

*You can adjust salt and pepper according to your preference.
*You can add additional cooking time if you want your vegetables to be more tender.
