Instructions
Heat avocado oil in skillet. Add ginger and garlic and saute until fragrant, approximately 1 minute.
Add ground pork, mushrooms and sprinkle with pepper to the skillet with ginger and garlic.
Cook until pork is brown and nearly crispy, and almost all liquid is evaporated. This will take some time since the mushrooms add some liquid to the skillet. It will evaporate.
While pork is cooking you can prepare the sauce by combining coconut aminos, sesame oil and rice vinegar. Set aside.
Once pork is fully cooked, add bagged coleslaw and pour prepared sauce over top.
Saute until coleslaw is tender. Remove from heat.
*Prepare Spicy Mayo Drizzle if desired.
Spicy Mayo Drizzle
Combine all ingredients for the mayo drizzle and use a whisk to combine well. It will have some clumps, keep stirring until it becomes creamy.
